Quinoa Pancakes

Hey hey everyone. How are you guys doing today? I'm doing fine, thank you very much. I'm just here to pop in and give you guys my quinoa pancake recipe.
I've been wanting to make pancakes for a while and finally, I decided to make them.
I assure you that you won't regret making it. This recipe is yummy and healthy. Enjoy!
It can be made vegan if you use an egg substitute such as a banana or some flax seeds mixed with water.

Ingredients:

  • 3/4 cup whole wheat flour
  • 1 cup cooked quinoa
  • 3/4 cup unsweetened vanilla almond milk
  • 1 tsp ground cinnamon
  • 2 packets stevia
  • 2 tablespoon agave
  • 1 egg
  • 2 tsp baking powder
Directions:
  1. In a bowl, mix together all of the ingredients.
  2. Heat up a non-stick skillet or a non-stick pan to cook your pancakes in.
  3. Spray with non-stick spray.
  4. Pour 1/4 cup mixture for one pancake. Wait until it bubbles and then flip. Cook for another minute on the other side.
  5. Continue doing this with the rest of the batter.
  6. Enjoy with whatever toppings you want. I love eating pancake with either sugar free chocolate syrup, peanut butter, bananas, or recently, Trader Joe's Cookie Butter.

I hope you guys enjoy these. =)
I know I will be enjoying these with Trader Joe's Cookie Butter. I'm totally addicted to it.

So, do you guys like pancakes?
Have you guys tried Cookie Butter before?
What do you like to eat your pancakes with?

Single Serving Whole Wheat Pancakes (Low Calorie!)

Hey Everyone! How is your weekend going? Mines have been alright. I went food shopping (Costco). I also got some frozen yogurt from the Food Court Yum.
So, I know that my sleeping pattern will be messed up tomorrow because of Daylights Saving Time. Really, what is the point of it? I really don't know. I don't think it saves any energy.
Anyway, I made these pancakes this morning. They're quite delicious too, if I say so myself. They're quick and easy to make. They're also really healthy, and can be made vegan. I made dorayaki with the pancakes. All I did was add red bean and made sandwich with two small pancakes. Quick, easy, and delicious. I just had to add red bean paste, because I love red bean. Here's the picture:

Looks delicious, right? They're also healthier than the other red bean dorayaki I made. Anyway, here's the recipe for these pancakes. Enjoy. :)

Ingredients:

  • 1/4 cup whole wheat flour
  • 1/4 cup fat free milk (soy milk, almond, your choice)
  • 2 packets of Splenda
  • 1/2 tsp vanilla extract
  • 3/4 tsp baking powder
  • 1/2 tsp cinnamon (optional)
Directions:

1. In a bowl, mix together the dry ingredients.

2. Then, mix in the wet ingredients.

3. Heat a skillet to medium heat.

4. Cook these "pancakes". Wait for bubbles to form before flipping.

5. This should make about 4 to 5 pancakes. 2 sandwiches.

6. Add red bean paste to make the sandwiches Enjoy.

Whole Wheat Pancakes

Hey everyone! Man, have things been crazy around here. I've been so busy with school. The past week has been Spirit Week at my school, and, I can say, many of my classmates go crazy dressing up. I wish I had taken pictures.
I may start posting more random things about my day, like the healthy foods/snacks, exercise, all of that. I will also try to add recipes or link you guys to healthy recipes I've found. There are quite a lot, to tell you the truth. I just haven't gotten around to try them out, because my family doesn't like me trying to make foods healthy.
Anyway, here I am. It's time for a new recipe today. So, as you guys know, it's my new mission to try to make foods a bit more healthy. So, I decided to make Whole Wheat pancakes. For being healthy, these are quite delicious. My father even likes them, even though he hates whole wheat items. He ate them during the week. :) Just freeze the leftovers, and heat them up in the toaster or toaster oven and they are ready to go. So, here is the recipe for the pancakes.

This makes around 10 pancakes.

Ingredients:

  • 1 3/4  cups Whole Wheat Pastry Flour
  • 1 tsp ground cinnamon (optional)
  • 2 tablespoon brown sugar
  • 2-3 tablespoon honey
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 egg
  • 1  1/2 cup milk
  • 1  tablespoon canola or olive oil
  • 1 tsp vanilla extract
Directions:
  1. In a bowl, mix together all the dry ingredients: the flour, baking powder and salt. You can add cinnamon if you want to. 1 tsp ground cinnamon, if wanted.
  2. In another bowl, mix together the eggs, honey, milk, sugar, oil and vanilla extract.
  3. Slowly mix in the the dry ingredients INTO the wet ingredients. Mix until combined.
  4. Let it rest for a few minutes.
  5. Pour about 1/4 cup onto a medium heated griddle/skillet and wait until it bubbles or lightly browned. Then, flip and cook for another minute or so. Make sure both sides are browned.
  6. Sprinkle with powdered sugar, or eat with bananas, nutella, strawberries, or whipped cream. It's your choice. I sometimes eat it with dulce de leche, but that's just my personal preferance. Enjoy. :)
