What I have been up to

Here's what I've been up in the past I don't know how many weeks! I've been so busy that I couldn't post everything while things were going on. It's a lot of pictures (especially of food!). Please bear with me.

There is always one food truck on campus every Tuesday and Thursday. I may have talked about this before but I so want to eat this again. They call it the pyrus or something like that. It's a grilled cheese sandwich with apples, almonds, honey and some other things. It's vegetarian. It sounds weird but it was so good! Also, I ordered it with sweet potato fries. AMAZING.



There's this fast food Indian place at my school called Mother India. My friend, Noelle, loves the food there, especially the samosa. She's vegetarian.  My other friend eats meat and loves the lamb curry. I decided to get the vegetable wrap one time and tried the tofu wrap the other time. I've been hooked since! It's wrapped in naan. My cousin's friend once found a maggot in their food so he doesn't go there anymore. That's why I didn't try it last semester. But, I finally gave in and I'm glad I did. 




After watching Catching Fire with my friends, we went to the food court of the mall to eat. I decided to get some Mediterranean food. There's lentils, there's a pita with falafel and there's tabbouleh.

The Superfood Veggie Patty from Costco is the only vegetarian "hamburger" they have at the Costco I go to. They used to have Boca but now it's only this they have. At least it's delicious! I just don't like the price that comes with it.

I went to Panera with a few of my classmates to study chemistry. I ordered the black bean soup and the Mediterranean Veggie Sandwich. They were both good!

These are my cousins, 2nd cousin (cousin's kids), and uncle playing around while the whole family went for a walk on Thanksgiving.

I bought this Greek yogurt with honey at Starbucks while working on a group project with a group mate. Then, we went to find some fenugreek seeds, just in case we would use it for our project.


I ordered this almond paste scone from Fluid one day and it was delicious!

I went to the mall and found this dress. I ended up not buying it. How does it look on me?

While shopping at the mall, we ended up eating a late lunch at Johnny Rockets. They actually had a veggie burger and a wheat bun! I ordered it with sweet potato fries but they gave me regular ones at first. I told them I had ordered sweet potato fries, so I ended up with two batches of fries. I LOVE sweet potato fries.

I ended up snacking on these cinnamon graham bears at school while studying for finals.

I saw this dress at Target and had to try it on. How does it look? I want honest comments, please.
 I also ended buying this other stuff at Target. I got Amy's Organic Soups, Annie's Organic bunny grahams, and some other things for my face. The bunny grahams are all gone...whoops.

They had this at work yesterday so I just had to drink some. I had an 8 am final yesterday and then I went straight to work after. Then, I wanted something sweet to drink. I got Zevia. At least it's not regular soda, right?

 I love pizza but I don't like going to the pizza store and ordering it. I'd rather bake it right in my own oven. So, I decided to buy one of the healthier frozen pizzas. I decided on Kashi Mushroom Trio & Spinach pizza.

Then at Costco, I tried the Spinach & Parmesan Greek Yogurt Dip sample. It was good! So, I decided to get it and I bought crackers to eat along with it at a different store. It's so good!

Food and Life

I bought this Vegan Carrot Cupcake last week from the bookstore and it was so good!




I bought this pumpkin empanada last week at Fluid. I've never tried it before until now. It tasted like pumpkin pie.



This is the turkey sandwich I bought from Costco the day before my half marathon. I love provolone cheese! I'm now a pescetarian, so I wouldn't eat this again.


In our culinary class, we made this pasta primavera. It was good, from what my classmate, Noelle, said. It looks pretty good, right? Recipe coming up soon!

I bought this yesterday from a food truck at school. It's sweet potato fries along with an apple, honey, cheese and almond sandwich on wheat bread. I know, it sounds gross but it was so good! It was the only vegetarian sandwich they had and I was hesitant to try it. I'm so glad I did! The fries were amazing too!

Last night, I attended one of my friend's recital. He plays bass and he's amazing at it. He was in orchestra during high school when I was in orchestra. His performance was just amazing. After watching him play, it made me realize how much I miss playing cello. I'm definitely going to start playing it again. This week hasn't really been my week and I feel that making music will help me feel better.

To end off, I have 3 exams next week, and one of them is chemistry. Wish me luck!

By the way, I attended the 24th Annual Envisioning California Conference today and it was so informative. I enjoyed it and the food was good too. I'll talk about it my next post!

Weekly Goals + Training Updates

Happy Sunday everyone. How are you guys doing today?

I'm feeling pretty great today. I finally ran the distance of a half marathon for my long run. The last few miles were torture but I made it through. I finished it in 2 hr 9 min 57 sec. I'm so proud of myself. My legs and feet are so sore though. I guess tomorrow will be my take it easy day.

By the way, I cannot stress how important it is to hydrate while doing physical activity. You really do need water and liquids when doing working out or doing strenuous activity.

So, let me recap my weekly goals for last week. I ended up not studying for chemistry because I am still on the wait list. I did make flashcards for nomenclature though! I guess that counts as studying. =) I also did call up a friend. It was nice to talk on the phone. I kind of miss the old days when people actually used the phone to talk. I also ended up using the computer pass 9 pm. It's so hard to not use it! I'll do better this week on that.

Anyway, here are this weeks goals.


This past week has been good. I stayed home and relaxed. Here are some pics from the week.


I love pineapple red bean buns. I basically just like the red bean filling! I show this picture because this was from the Chinese store and they actually but TRANS FAT FREE shortening. I was amazed! I guess it's "healthier", you can say.

I also tried making homemade tortillas and I made a chicken brown rice sushi salad.




I also made these whole wheat peanut butter and banana muffins. I'll post the recipe later this week!


It's a lot of food pictures. I'm sorry! Anyway, on Friday, I went to work. But, of course, I went to Fluid to get some food to eat at work. I went in and they saved me a veggie burrito (they ran out when I went in last week). That was so nice of them. That's why I love going there (and the fact that their food tastes amazing!). They even had my name on the paper wrapping the burrito. =)


This was just half of the burrito. There was zucchini, pesto, eggs, potatos and some other things I don't remember. It was so good though! And, I ate a whole wheat chocolate chip cookie. Their chocolate chip cookies are the bomb! I also love that they have organic free-trade coffee.

I am now officially CPR certified! I got it yesterday! =)

Before getting it though, I went to eat breakfast at McDonalds. I got the egg white delight and took out the ham. I don't like ham.


And, of course, I got coffee. I have to have my cup of coffee every morning. The sandwich was just decent. I don't like eating breakfast any McDonald's but my family eats their once in a while. I usually just get coffee whenever I'm with them but I decided to try this because it has egg whites. Their's also cheese too. The sandwich tasted alright.

The CPR class was very informative. It's good to learn some new skills.

Elf 4 Health

nutritionellaHey everyone! I'm an Elf!

I started the 6 week Elk 4 Health Challenge. It's basically to keep people on track on their health during the holidays. I'm so excited!

I found out about this because I follow the blog The Lean Green Bean.









 
So, today is Meatless Monday! I'll update this post as I eat my meals.

Anyway, for breakfast, I ate Chocolate Covered Cheerios with fat free milk.






For lunch, I'm having a Veggie Boca Burger with lettuce and Smart Balance Mayo on Whole Wheat Bread.



I'll see what I have later on in the day. Like I said, I'll update this post as I go along.


Seriously, though. You guys should join it. You get to meet cool new people.

And, here's the rest of my meals.

For a snack, I ate more chocolate cheerios and a cup of coffee. The coffee made me feel a little sick though. That didn't happen before...




After that, I ate the Alternative Baking Company Vegan Pumpkin Spice Cookie and some dark chocolate covered pretzels.


For dinner, I ate yam, tofu and green beans. I was going to make Buddha's Delight but plans change.


I admit that I ate a bit too much sweets today but I'm happy to say that meatless Monday was a success. I can't wait for tomorrow's challenge.

Happy Thanksgiving!!!

Happy Thanksgiving everyone. I hope you guys had a great turkey day. I know I had a good one.
For one thing, I spent most of the day with my cousins, aunts and uncles. It was really nice. In the afternoon, we all walked along the river, talked and had a great time.
Then, at night time, we all had a potluck. I baked pumpkin pie to bring (I will post the recipe tomorrow!).  Everyone else brought Chinese dishes. Well, at least there was turkey. That's how my family's Thanksgiving Dinner's are. Turkey and Chinese dishes. It's nice though but sometimes, I want to eat sweet potato casserole. I love my family though. We all have someone to talk to and rely on. It's a really nice feeling. We've all managed to stick together.
However, literally right after eating dinner tonight, people left for Black Friday shopping. I don't blame them. I mean, the TV's are pretty cheap. Other than that, I'd wait for another sale to buy other items. I guess it's just for the experience.

Anyway, I'm thankful for many things. Here's a few of the many things I'm thankful for:

Happy Veterans Day!!!

Happy Veteran's Day everyone. It's a day to honor those that served the country. I thank them for what they have done to help protect the country.

So, for Veteran's Day, Applebee's was having a promotion that all Veteran's will get a free meal on Veteran's Day. How do I know this? I went there today. We were greeted right away and we barely waited 2 minutes before we were seated. There were so many people there today though.

So, here is what I ordered:
This is the Jalapeno Lime Shrimp. It was delicious. Well, the shrimp and the vegetable parts were delicious. It had a lot of flavor. I was surprised at how much shrimp there was. Most restaurants skimp on the shrimp and I love shrimp! The vegetables surprisingly tasted delicious as well. The only problem was with the rice. It was dry and bland. I even tried adding pepper to it. It added some flavor but not much.

I also went to the store today and I saw this soda box arrangement:

 It's a turkey!

Anyway, I guess I have some food reviews. It's going to take a while Bear with me!

So, one of the things I have to review is this:


PowerBar Protein Plus Dulce de Leche. I just had to try this flavor. I mean, it's dulce de leche. I love dulce de leche. I bought it at the bookstore and it was expensive. I guess it was worth the price. It wasn't anything special. It was chocolate outside with a sweet protein chew mixture in the inside. It was pretty much a decent bar.

The next bar is this:


Blueberry Crisp Clif Bar. This was isn't chocolate but it's blueberry. I love blueberries. When I ate this, it was like a chewy blueberry muffin. It's delicious! I also like how the almond pieces give it a bit of a crunch. It's nice. It's my favorite non-chocolate Clif Bar.

Another non-chocolate bar is this:


Nature Valley Trail Mix Fruit & Nut Bar. This bar was alright. I liked it but it's not the best. It's chewy, hearty and tastes almost like the kashi ones but without as many almonds. This bar is really nice though and the cranberries were nice. I will eat this again if I ever come across it.

Another thing you have to try is this:

It's a White Chocolate Macadamia Nut Clif Bar. It's microwaved. It tastes really good too. I got this idea from TIU. Microwaving it makes it taste like a real dessert. The melted frosting and white chocolate in cake. That's how it tastes It's so good.

So, on Friday, I went to a Chinese restaurant just to buy this to eat:


Yes. It's the Hong Kong egg puffs. I've been craving for them since I left the motherland back in July. I haven't eaten them since. I remember getting these a lot in Taishan and in Hong Kong. Eating these gave me back memories and the tastes was almost the same.

I also went to this crepe place and got this (how do you pronounce crepe?):

It's the Strawberry Nutella Crepe. It has whipped cream and ground cinnamon on the sides. It was delicious too! And, it was very filling. The crepe itself tasted good. The strawberries had melted chocolate drizzled all over them and some powdered sugar. The nutella was inside the crepe. It was amazing. The strawberries tasted nice and fresh too. The crepe was warm and with the nutella, it tasted amazing. I ate the strawberries with the whipped cream and it tasted good. I tried some whipped cream and strawberries with the crepe and nutella. But, there wasn't as much nutella as I would have liked.

Later on Friday, I made Macaroni salad and M&M cookies .

The recipe for this salad will be up later, once I perfect the recipe. My uncle says that I should have added peas, which would making it more aesthetically pleasing. I agree but kids don't like peas in their salads usually and there were a lot of kids.

The next day, I went food shopping a bit with my mom. Here's some things we bought:


I wanted to pie the pumpkin flavored Clif bar but the store wasn't selling it. I was so sad. But, hey, at least I got the Clif Peppermint Stick and the Clif Gingerbread. We also bought the Asian Sesame Ginger Vinaigrette and the Sarah Lee 100% whole wheat with honey bread. I checked the ingredients and it's 100% whole grain. I just don't like this bread's high calorie content. 100 calories for a slice. The sandwich thins are 100 calories.  I haven't tried this Sara Lee bread yet but once I do, I'll review it along with Justin's All Natural  Chocolate Almond Butter. I can't wait to try it.

So, I've already eaten the Clif Bar Peppermint Stick.

 You can definitely  see the peppermint in the bar. It tasted pretty much like a normal Clif bar with peppermint. The peppermint flavor wasn't overpowering and it was just right. Sweet, chewy and minty bar. If you guys like mint, go ahead and eat this bar. You will be satisfied but this isn't for me. I like the chocolate kinds or blueberry one. 

So, the weather around here has been really cold. No me gusta. It also rained on Thursday. I guess you know that winter is coming soon. I'm sorry for not posting for a while. I've been busy.

I guess that's all I have to say.
