Whole Wheat Peanut Butter Banana Muffins

Hey hey everyone. I've been busy all week with classes. I'm sorry I didn't post this recipe earlier in the week. But, I finally have it up (I'll talk about my first week back in the next post)!
These whole wheat peanut butter banana muffins are delicious! They are really simple to make. These only make about 7-8 muffins. I made half the recipe since I only had one banana. But, hey. Making some is better than having none. Here's the recipe.
Remember that you guys can eat these as a snack or part of breakfast!




Ingredients:

  • 1 cup whole wheat flour
  • 1 ripe banana, mashed
  • 1/3 cup milk
  • 1/3 cup sugar (or less, if you want them to have less sugar)
  • 1/4 cup peanut butter 
  • 1 tsp baking powder
  • 1 tsp vanilla extract (optional)
  • chocolate chips (optional)
Directions:
  1. Preheat the oven to 350 F. 
  2. In a bowl, mix together the milk, sugar, banana, and peanut butter. 
  3. In another bowl, sift together the flour and the baking powder. 
  4. Slowly pour the flour mixture into the wet ingredients and mix as you pour the flour in. 
  5. Pour the batter into the muffin pans, 
  6. Bake for 20-23 minutes. 
  7. Take it out, let it cool and enjoy!
I would have added chocolate chips (dark chocolate chips, that is!) but I didn't have any. So, next time, I will add it.

Delicious Frozen Greek Yogurt

Hola! Today was such a great day. I got some Jamba Juice, the Berry Fulfilling, with soy protein! It was delicious. By the way, Jamba Juice is having a one dollar sale on their 16 oz smoothies this week. However, it's only from 9 am to 11 am. Go there while you can. It ends this Friday! That's actually the only reason why I went to Jamba Juice today.

Anyway, let's get back to recipes. As you know, I'm trying to eat really healthy. So, I'm going to be trying to post healthy recipes that I've tried and I think are good to eat. Well, I love frozen desserts, especially ice cream and froyo. So, I decided to make a "healthier" version of it. It can be eaten as dessert or even a post workout snack.

The taste and texture is not exactly like froyo, but it's still equally delicious. It's thick and creamy. So, here's this simple recipe. You will only need  3 ingredients, at most. I've made it using different types of greek yogurt flavors.

Ingredients

  • strawberry greek yogurt (I use oikos, but other brands work fine)
  • extra dark chocolate chips (2-3 tablespoons)
  • vanilla protein powder ( 1/2 scoop)
*the last two ingredients are optional

Directions:
  1. Place the greek yogurt into a container in which you can put in a freezer. 
  2. Mix in the optional ingredients. 
  3. Leave it in the freezer for at least 1 hour. 
  4. Take it out of the freezer. Scoop out the "ice cream" into a bowl. 
  5. Enjoy. :)

Raw Breakfast Cookie

Hey everyone! How's your Friday the 13th going today? I hope it's going fine. I know that mines has been pretty good so far, despite the fact that this day is supposed to be a bad day. It did rain in the morning, but then again, it rained all this week. Yesterday, it was pouring rain. Today, there was only a little. It stopped in the afternoon. My world politics class is doing a model UN (United Nations). Today's Model UN meeting went really well. Also today, I performed in a talent show. I sang Lo mejor de mi vida eres tú. People complimented me but I was so nervous while I was singing it acapella. Haha. I guess people do have to compliment performers, even if performers are bad. you don't want to make them feel bad. but, yea. I literally signed up last minute to perform. I wanted to be impulsive for once.
Anyway, back to the raw breakfast cookie. This breakfast cookie is actually pretty good, in my opinion. It will fill you up and it's delicious and healthy. I was hesitant to eat raw oats at first but it actually tastes good and the texture is good too. The idea came from this blog and I adjusted it to suit my tastes. Here's the recipe and I hope you enjoy it.

Ingredients: 

  • 1/3 cup old fashioned oats
  • 1 tablespoon peanut butter
  • 1/2 scoop protein powder or cocoa powder (optional)
  • 1/2 tsp ground cinnamon
  • 1 packet splenda
  • 1 to 2 tablespoon milk (any kind)
  • and anything you would like to add to your cookie (chocolate chips, raisins, nuts, etc.)
Directions: 
  1. Mix together the oats, powder, splenda and ground cinnamon. 
  2. Combine together with the peanut butter. 
  3. Add in the milk until well combined. 
  4. Then, you can add the add ins you want. 
  5. Put it on a small plate and flatten it. 
  6. Refrigerate overnight. 
  7. Enjoy.

Vanilla Granola

What a nice way to start off Spring Break, with pouring rain. I guess it's a good thing because we've been in a drought for a long time. But, it just ruins the day and makes things all gloomy. I just hate rain. I like bright sunny blue skies and 70-80 degree weather. I guess that's just me though.
Anyway, I decided to try to make my day a little bit better by making granola. I love granola. It's delicious, but it's almost quite expensive to buy. You can eat granola by itself, with milk, on yogurt, it's yummy. It's especially good with fat free frozen yogurt.
Today is my first time making granola and I have to say, it didn't turn out as bad as I thought. I thought that I'd probably burn the whole thing, but I didn't. I burnt 1/8 of it. I waited 10 minutes before stirring the batch, while I should have done it every 5 minutes or so. I've learned my lesson. But, hey, I know what to do next time and I still have great tasting granola. It's cheaper than store bought ones and much healthier. If you make 10 servings, it's around 115 calories. I don't know how much that is though. Just divide it into 10 servings and see how it turns out. Anyway, here's the recipe. Enjoy. :)

Ingredients: 

  • 2 cups old fashioned oats
  • 1 1/2 tsp ground cinnamon
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 2 tablespoons vanilla extract
  • 2 tsp canola oil
Directions: 
1. Preheat the oven to 350 F.

2. In a bowl, mix together the oats, cinnamon and brown sugar. 

3. Add in the oil, honey and vanilla extract. Mix well.

4. Pour the mixture onto a pan and spread it out. 

5. Bake for 20 minutes, mixing it every 4 to 5 minutes. Make sure it doesn't burn.

6. Enjoy

Single Serving Whole Wheat Pancakes (Low Calorie!)

 Hey Everyone! How is your weekend going? Mines have been alright. I went food shopping (Costco). I also got some frozen yogurt from the Food Court Yum.
So, I know that my sleeping pattern will be messed up tomorrow because of Daylights Saving Time. Really, what is the point of it? I really don't know. I don't think it saves any energy.
Anyway, I made these pancakes this morning. They're quite delicious too, if I say so myself. They're quick and easy to make. They're also really healthy, and can be made vegan. I made dorayaki with the pancakes. All I did was add red bean and made sandwich with two small pancakes. Quick, easy, and delicious. I just had to add red bean paste, because I love red bean. Here's the picture:


Looks delicious, right? They're also healthier than the other red bean dorayaki I made. Anyway, here's the recipe for these pancakes. Enjoy. :)

Ingredients: 

  • 1/4 cup whole wheat flour 
  • 1/4 cup fat free milk (soy milk, almond, your choice)
  • 2 packets of Splenda
  • 1/2 tsp vanilla extract
  • 3/4 tsp baking powder
  • 1/2 tsp cinnamon (optional)
Directions: 

1. In a bowl, mix together the dry ingredients. 

2. Then, mix in the wet ingredients. 

3. Heat a skillet to medium heat. 

4. Cook these "pancakes". Wait for bubbles to form before flipping. 

5. This should make about 4 to 5 pancakes. 2 sandwiches. 

6. Add red bean paste to make the sandwiches Enjoy.

Chocolate Pancakes

您们好! How are you guys today? I decided to start off with typing a different language, which I hope is okay. Another exciting thing is that, there are British exchange students here at my school! It's so exciting. I'm going to try to get a recipe from them, and possibly have them guest post. We'll see how that goes. It'd be nice to have some British food to try.
Anyways, I promised you guys a chocolate pancake recipe. Unfortunately, I don't have any pictures for them. They were all eaten up before I had a chance to take pictures.* I found one picture of these pancakes. These pancakes are really chocolaty and are really rich. I love eating these with dulce de leche. You can eat them with whipped cream and strawberries if you like. It's your choice. Next post will be my attempt at making pan de muerto, since Día de Los Muertos is coming up next week. Anyways, enjoy these chocolate pancakes and I really hope that I can post a British food recipe from actual British people. Enjoy these chocolate pancakes in the meantime. :)

*I got a recipe of the Victorian sponge cake from them, but I have yet to make it.
Ingredients:
  • 1 cup flour
  • 1/2 cup unsweetened cocoa powder (can be 1/3 cup instead) 
  • 1/4 cup sugar
  • 1 1/3 cup milk
  • 2 tsp baking powder
  • 1 tablespoon canola oil
  • 1 egg
Directions:
  1. In a bowl, sift together the sugar, flour, and baking and cocoa powder. 
  2. Mix in the milk, oil and egg. 
  3. Heat a skillet or non stick pan to medium heat. 
  4. Pour 1/4 cup of the batter and wait until it starts bubbling. Then flip and let it cook for another minute or so. 
  5. Do this with the remaining batter. Serve warm with whatever toppings you want. Enjoy. :)

Gluten Free Pancakes (Rice Flour Pancakes)

Hey everyone. What's up? Well, today, seems to be an off day for me. I've had a weird day. I have no clue why it feels that way. I hate feeling like this. Anyways, I made pancakes today, because my brother loves pancakes, and he wanted some. The only thing is that, we ran out of regular all purpose flour to make these pancakes. So, I looked online and searched for a gluten free pancake recipe, the one that doesn't use flour. Well, the one I found uses rice flour. I edited it a little bit. However, these pancakes taste yummy. I was quite surprised. However, this pancake doesn't look good, huh? Well, it's because I found out that the batter is really funny. I was unable to make perfect circles with it like I do with my regular pancake recipe, which is here. At least they taste good. Well, here's the recipe. Enjoy. 

Ingredients
  • 1 cup rice flour
  • 3 tablespoon sugar
  • 2 teaspoon baking powder
  • 1 cup  milk ( I would reduce it, since it was really runny with the full amount)
  • 1 egg
  • 2 tsp oil
  • 1 tsp vanilla extract
Directions: 
  1. Mix together the flour, sugar, and baking powder. 
  2. Gradually pour in the milk, while mixing. 
  3. Mix in the egg, oil and vanilla extract.
  4. Let it sit for 20 minutes and then cook both sides until golden. 
  5. Enjoy. You can add chocolate chips, syrup, fruit, powdered sugar, or whatever toppings you guys like.

Cinnamon French Toast

Hello, everyone. I know I already posted a recipe earlier, but I still have to fulfill my goal of catching up with the recipes that are suppose to be made each week. Please bear with me.  Also, as an update on my life, I did some job shadowing (a dietitian) and volunteer work the past two days. Quite fun and interesting. Anyways, this morning, I made cinnamon french toast. I haven't eaten it in such a long time, and I love cinnamon. Especially the cinnamon rolls I've made before. We also had some leftover bread that we needed to eat because we didn't want to make any more sandwiches. I should have made it healthier though. Use 100% whole wheat bread, egg beaters (egg whites), low calorie sweetenerand skim milk (or soymilk). It's just an idea, but my recipe does not use the healthy ingredients, just regular ingredients. Enjoy. :)


Ingredients
  • 2/3 cup milk
  • 2 eggs
  • 1/4 cup sugar
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • bread slices
Directions
  1. Whisk together the eggs and milk and mix in the sugar, cinnamon and vanilla. 
  2. Heat a skillet or non stick cooking pan to medium heat. Spray with butter flavored cooking spray, such as PAM.
  3. Dip both sides of the  bread slices into the mixture and put into the pan. Cook until golden brown on both sides. 
  4. Covering the lid helps, when cooking these. 
  5. Serve with either syrup, sugar or fruit. Your choice. Enjoy. :)
