Applesauce Muffins

Imagine yourself waking up on a Saturday morning to the smell of freshly baked muffins. You suddenly bolt up and dash to the kitchen to get your hands on these muffins. 


What makes these muffins even better is that they're made with whole wheat flour. There's more fiber and nutrients in these muffins. And, you know what? They taste great too! My group baked these muffins in our culinary class the other day and I just have to share it with you guys. Here it is. 

Ingredients:
  • 1 cup whole wheat flour
  • 1/4 tsp nutmeg
  • 1/3 cup  + 2 tablespoon sugar
  • 1/2 cup unsweetened applesauce
  • 1/2 tsp baking soda
  • 1/4 cup oil 
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/2 tsp vanilla
  • 1 egg
  • dark chocolate chips or craisins (optional) 
And for the topping:
  • 2 tablespoon sugar
  • 1 tsp ground cinnamon
Directions:
  1. In a small bowl, stir together the topping ingredients and set aside.
  2. Into a medium bowl, sift the dry ingredients.
  3.  In a small bowl, combine the liquid ingredients. Add the liquid ingredients to the dry ingredients
  4. Spoon batter into muffin cups (about 2/3 full). Sprinkle top of each muffin with topping mix.
  5. Bake 15 to 20 minutes, or until toothpick inserted in center of muffin comes out clean.
  6. Remove pan from oven; carefully remove muffins from muffin cups immediately; cool muffins on a rack.

Whole Wheat Peanut Butter Banana Muffins

Hey hey everyone. I've been busy all week with classes. I'm sorry I didn't post this recipe earlier in the week. But, I finally have it up (I'll talk about my first week back in the next post)!
These whole wheat peanut butter banana muffins are delicious! They are really simple to make. These only make about 7-8 muffins. I made half the recipe since I only had one banana. But, hey. Making some is better than having none. Here's the recipe.
Remember that you guys can eat these as a snack or part of breakfast!




Ingredients:

  • 1 cup whole wheat flour
  • 1 ripe banana, mashed
  • 1/3 cup milk
  • 1/3 cup sugar (or less, if you want them to have less sugar)
  • 1/4 cup peanut butter 
  • 1 tsp baking powder
  • 1 tsp vanilla extract (optional)
  • chocolate chips (optional)
Directions:
  1. Preheat the oven to 350 F. 
  2. In a bowl, mix together the milk, sugar, banana, and peanut butter. 
  3. In another bowl, sift together the flour and the baking powder. 
  4. Slowly pour the flour mixture into the wet ingredients and mix as you pour the flour in. 
  5. Pour the batter into the muffin pans, 
  6. Bake for 20-23 minutes. 
  7. Take it out, let it cool and enjoy!
I would have added chocolate chips (dark chocolate chips, that is!) but I didn't have any. So, next time, I will add it.

Double Chocolate Protein Muffins

I love chocolate. It's one of my most favorite foods. So, I was so happy to find a Double Chocolate Protein Muffin recipe. I also love baked goods. What got me hooked was that this muffin recipe is actually healthy. No butter, nor oil is used.
What's even more amazing is that it uses simple ingredients, so you don't have to buy fancy ingredients except for protein powder.
I made this earlier this week. It's really simple and easy. You'll love it. Here's the recipe.

Ingredients:
  • 2/3 cup whole wheat flour
  • 1 scoop vanilla protein powder
  • 1 tsp baking powder
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup sugar
  • 1/4 cup dark chocolate chips
  • 3/4 cup nonfat greek yogurt 
  • 6 tablespoon apple sauce
  • 1 egg
Directions: 
  1.  Preheat the oven to 350 F.
  2. Sift together the flour, protein powder, baking powder, and sugar in a bowl. 
  3. Mix in all the wet ingredients.
  4. Mix in the chocolate chips.
  5. Pour the batter into cupcake pans (lined with paper liners). 
  6. Bake in the oven for 20 to 25 minutes. 
  7. Take out and enjoy. I like eating it with the dulce de leche I made.







 Don't these muffins look delicious?Well, they are. Next time, I may add dulce de leche in the middle. It'll make it so rich.

Banana Muffins! Yummy Recipe. :)



Hey Everyone!! Man, It's been really long since I last posted a recipe. Things came up again, and I was too busy and stressed out about some things. Just to be clear, if any of you guys want me to translate any of these recipes into Spanish or Chinese, tell me. Email me (you can find on my profile or my first posts) or post a comment, and I will be happy to do so. I was going to post the 碱水粽 recipe, but it will the next post. I decided more on an American food, because tomorrow is the 4 of July! Independence Day! Yeah! I'm so happy. and excited. The food is banana muffin. xD This is more of a breakfast food, but hey, it's yummy, and you guys can eat it for a family brunch or something for the 4 of July. Just some ideas of what you can do for the 4 of July weekend.
Well, to tell you the truth, I made these banana muffins today because we had a lot of overripe bananas we needed to get rid of. They were too sweet and ripe for us to eat by themselves. We didn't want to waste the bananas either. My family loves these muffins, especially my little brother. Then again, he loves all baked goods. But, hey, who doesn't? Maybe I'll make some red velvet cake next time. I've made it before, but I will try again some other time when I can. I'm rambling off now. Here's the recipe for banana muffins.

Ingredients

In one bowl, combine and mix:
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 - 1 tsp ground cinnamon (optional)
In another bowl:
  • 1/4 cup vegetable oil (or melted butter)
  • 3/4 cup sugar
  • 1 egg
  • 1-2 tsp vanilla extract
  • 1/4 cup milk
  • 3 ripe bananas
  • 1/2 cup chocolate chips (optional, I usually add it, but I ran out this time)
Directions: 
  1. In one bowl, sift and mix together the flour, baking soda, and baking powder. Also the cinnamon, if you are using it. 
  2. In another bowl, "cream together" the sugar and the oil (or the butter, if you are using that). Then, mix in the egg. 
  3. Peel the bananas, and put them in a plastic ziploc bag. Then, squeeze and mash the bananas. Add it to the sugar mixture. 
  4. Then, add the vanilla extract and milk to the sugar and banana mixture. Mix well.
  5. Then, combine the sugar mixture with the flour mixture. To do this, slowly pour and mix the flour mixture INTO the sugar and banana mixture. Mix, and combine. Do not over mix it. If wanted, you can add the chocolate chips. If you like adding nuts to your muffins, you can add them at this step.
  6. Preheat the oven to 350 F. 
  7. Place cupcake liners into a muffin pan and fill them 3/4 way full. If you are not using cupcake liners, spray the pan with pam spray so that the muffin won't stick to the pan after it's done baking. 
  8. Bake for 20 - 25 min. After they are done baking, enjoy eating them.
