Double Chocolate Protein Muffins

I love chocolate. It's one of my most favorite foods. So, I was so happy to find a Double Chocolate Protein Muffin recipe. I also love baked goods. What got me hooked was that this muffin recipe is actually healthy. No butter, nor oil is used.
What's even more amazing is that it uses simple ingredients, so you don't have to buy fancy ingredients except for protein powder.
I made this earlier this week. It's really simple and easy. You'll love it. Here's the recipe.

Ingredients:
  • 2/3 cup whole wheat flour
  • 1 scoop vanilla protein powder
  • 1 tsp baking powder
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup sugar
  • 1/4 cup dark chocolate chips
  • 3/4 cup nonfat greek yogurt 
  • 6 tablespoon apple sauce
  • 1 egg
Directions: 
  1.  Preheat the oven to 350 F.
  2. Sift together the flour, protein powder, baking powder, and sugar in a bowl. 
  3. Mix in all the wet ingredients.
  4. Mix in the chocolate chips.
  5. Pour the batter into cupcake pans (lined with paper liners). 
  6. Bake in the oven for 20 to 25 minutes. 
  7. Take out and enjoy. I like eating it with the dulce de leche I made.







 Don't these muffins look delicious?Well, they are. Next time, I may add dulce de leche in the middle. It'll make it so rich.

CLIF White Chocolate Macadamia Nut and Odwalla Berry GoMega Review

 As you know, I love eating granola bars, energy bars, whatever you call them. I especially love the chocolate flavored ones, and I may stick to just chocolate ones from now on. I will talk about that later on in this post.
So, I took my first math exam yesterday and I was so nervous. But, it ended up being easier than I thought it would be. But, before taking the exam, I decided to calm my nerves by eating this White Chocolate Macadamia Nut Clif Bar.
I love this energy bar because it's healthy and it tasted so much like a dessert. Yesterday was my first time eating it and I was so happy I bought it. I should have bought a lot more! This bar was absolutely delicious. It tastes exactly like a chewy White Chocolate Macadamia Cookie. Just the right size and thickness with the sweet white chocolate. The macadamia nuts added just the right crunch to the chewy bar. I also liked the icing.

So, today, after going out for a jog with a friend, I ate this Odwalla Berry GoMega Bar. Now, let me say this. There are definitely berries in this bar. There are a lot of dried berries. I do love dried blueberries and dried cranberries. However, this bar just had too much. It was also too chewy. I'll eat it again, if someone gives it to me, but I'm not going to buy it myself again, even though they are cheaper than Clif bars. I'd rather go with taste than price. What's a 10 cent difference, anyway? It was pretty decent though. If you like berry kind of energy bars, you'll love this. I'm just more a chocolate dessert type of person.

Dulce de leche

I can't believe it. I can't believe it. I finally get to eat dulce de leche! I've been craving it so badly, especially eating it as alfajores. I haven't eaten them for a year a so and same with dulce de leche. It's so rich and sweet, but boy, does it taste so good. I finally made it a couple of days ago and I'm here to share the simple recipe with you.
It's simple because you don't have to use the stove top method with all it's separate ingredients. I tried that before, but it never thickened up to my liking. It tasted delicious though, but it took at least a couple hours, tons of gas for the stove top and a hot kitchen.
Anyway, here's the "recipe". It's so simple and the results are good. Eat it with toast, ice cream, apples, chocolate chip cookies or even make peanut butter dulce de leche sandwiches with them. Go make alfajores with them too, a great Argentine treat.

Ingredients:

  • a can of sweetened condensed milk (you can use up to 2 cans in a slow cooker, if you would like more)
  • a slow cooker
  • water
 Directions:
  1. Remove the label from the cans. 
  2. Place the cans in the slow cooker. 
  3. Fill the slow cooker up with water, making sure the water is at least 1/2 inch above the cans. I think I did 1 inch. 
  4. Set it to low and let it sit there for 8 hours. Do 10 hours if you are using 2 cans. 
  5. Take the cans out and let them cool before opening the cans. 
  6. Enjoy. 
  7. Take note that if you place the dulce de leche in the refrigerator, it will get thicker (which I like). You can place it there before using it.

More Granola Bars Reviews

 I can't believe it. I found this unpublished draft of a blog post I thought I had posted before in April. I guess I forgot to publish it. All these bars and foods were delicious! Anyway, here it is:
Hey everyone! What's up? Well, today is my first official day of Spring Break. And what do I do? Stay home. It's not a bad thing. But, I would rather go out and travel around. It is nice to stay home and do nothing though. So, being bored and having nothing to do, I finally have time to tell you guys about some granola bars that I've been eating. There are tons, so bear with me. Enjoy.


This Mojo Mountain Mix Bar was delicious. I love how the ingredients are all natural too. With the addition of chocolate chips, I couldn't stop eating these!
This Fiber 1 cereal was pretty decent. It had just the right amount of sweetness. I love that it's low calorie. However, be careful to not let it sit in the milk too long. It gets soggy really fast.

I can't believe they sell this at Costco. Hello Panda. I love Hello Panda. I use to buy these from the Asian stores all the time. But, they're much cheaper here. Tastewise, they are about the same.

Mojo Peanut Butter Pretzel is delicious! Just the right amount of saltiness and sweetness.


The Dipped Chocolate Peanut Mojo bar was pretty good. I didn't taste much of the peanuts, but it was still good. I just didn't like that the size was smaller than the other 2.
This FiberPlus Antioxidants bar was delicious. It was pretty chewy though.

I don't know much about these, but they were crunchy and sweet. I'd eat them with peanut butter.

I loved this oatmeal to go bar. I love cinnamon. It was so sweet but so good!


This LUNA Iced Oatmeal Raisin is one of my favorites. It tastes just like the cookie!

This LUNA Nutz Over Chocolate Bar was alright. It's like any other LUNA bar, but with chocolate. I barely tasted the nuts.


This Chobani greek yogurt was delicious! I can't wait to buy it again.


I love the Kashi GOLEAN Crunchy Bars. I wish they had them more often at Costco. My favorite flavor is the Chocolate Pretzel so far. But, all flavors I've tried are delicious and I can eat them everday for breakfast. I ate them for breakfast too, until I ran out.

As for the Animal Crackers, Costco Disney Animal Crackers are my favorite. I get so addicted to these whenever we buy them. I eat them so much. I practically finish the whole container within 2 weeks.






I enjoy these Clif Kid Zbars. But, I like the original Clif ones better or their LUNA or Mojo bars. It's mainly because these are a lot smaller.
