Quinoa Pancakes

Hey hey everyone. How are you guys doing today? I'm doing fine, thank you very much. I'm just here to pop in and give you guys my quinoa pancake recipe.
I've been wanting to make pancakes for a while and finally, I decided to make them.
I assure you that you won't regret making it. This recipe is yummy and healthy. Enjoy!
It can be made vegan if you use an egg substitute such as a banana or some flax seeds mixed with water.



Ingredients:

  • 3/4 cup whole wheat flour
  • 1 cup cooked quinoa
  • 3/4 cup unsweetened vanilla almond milk
  • 1 tsp ground cinnamon
  • 2 packets stevia
  • 2 tablespoon agave
  • 1 egg
  • 2 tsp baking powder
Directions:
  1. In a bowl, mix together all of the ingredients.
  2. Heat up a non-stick skillet or a non-stick pan to cook your pancakes in. 
  3. Spray with non-stick spray. 
  4. Pour 1/4 cup mixture for one pancake. Wait until it bubbles and then flip. Cook for another minute on the other side. 
  5. Continue doing this with the rest of the batter. 
  6. Enjoy with whatever toppings you want. I love eating pancake with either sugar free chocolate syrup, peanut butter, bananas, or recently, Trader Joe's Cookie Butter.

Protein Pancakes!!


Sorry that I haven't posted a recipe in such a long time! I wanted to post my China trip in one group so that it isn't scattered around my blog. Anyway, how have you guys been? I've been fine, staying home and getting ready for college. I'm also now a pescetarian. I eat seafood now, instead of just no meat. The only reason is that my parents will not allow me to not eat meat. I'll have to wait to become a full time vegetarian.
Anyway, the great thing about my university is that I can finally go to the gym to work out! My university has a gym that all students can use. I'm so excited. The last time I went to the gym was 3 years ago and I've been doing my in home workouts since then (gym memberships are expensive!).

I usually work out the first thing in the morning. I wake up very early, even during the summer. I wake up at 5 am during the school year and I wake up around 6 or 7 during vacation time. I know, I'm crazy. I'm just a morning person. After working out, you need to refuel, right? The body needs the protein and the carbs to refuel. So, I decided that protein pancakes are a great choice. 

Yes. Protein pancakes. The texture and taste are different from regular pancakes but they are still delicious. Add some peanut butter or almond butter  and some fruit, and you have a great breakfast/post-workout meal.

So, here's the recipe. It's from Tone It Up, if you've heard of those girls. They have great workouts that I do sometimes and they have great healthy recipes. Enjoy.  It makes 2 HUGE servings. 

Ingredients:
  • 2 scoops vanilla  protein powder
  • 1/2 cup  egg whites
  • 1 banana, mashed or 1/2  cup applesauce
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • chocolate chips (optional)
Directions:

  1. Sift all the dry ingredients together. 
  2. Mix in the wet ingredients. 
  3. Heat a skillet to medium heat. 
  4. Cook the pancakes like every other pancake. 
  5. You can add chocolate chips if you want. 
  6. Eat it with anything you want. Maple syrup, peanut butter, fruit. Enjoy. 








I also ate some fruit salad. :)

Pancakes!!

Hey everyone! How are you guys doing? Well, I'm doing pretty well. I got my wisdom teeth pulled out a day or two ago, which kind of sucks, but everything is fine. I got nothing else to do while recovering, so I decided to make these pancakes! Don't they look delicious? Yeah, they do. My family loves these pancakes. I rarely make them, because my parents say pancakes are unhealthy, even though they are delicious. I wish I could make them healthier, but, they don't like it when I try to make things healthier, well, the dessert like foods at least. I was unable to eat these pancakes, which I am sad about, but at least my family got to enjoy them. My siblings decided to make a Micky Mouse face with the pancakes, just for the fun of it. Doesn't it look cute? There are pancakes without the chocolate chips too, but, those pictures will be in the instructions. So, here's the recipe for the pancakes! They're quite easy to make, really.

Ingredients
  • 1  1/2  cup flour
  • 2 tsp baking powder
  • 3 tablespoon sugar
  • 1  1/4  cup milk
  • 1 egg
  • 3 tablespoon butter, melted*
  • 1 tsp vanilla
  • choco chips (optional)
 *To melt the butter, you can microwave it.

Directions
  1. In a bowl, combine the flour, sugar  and the baking powder.
  2. Mix in the milk, egg, and vanilla extract. 
  3. Melt the butter, and mix it into the batter.
  4. Get a nonstick skillet, or something to cook the pancakes in, and heat up in medium heat. Spray non-stick cooking spray (such as PAM). 
  5. Pour as much batter as you want (1/4 cup, or as big or as small as you want), and then wait until you see bubbles starting to form. Once you see bubbles, flip the pancake. The first pancake is usually the test pancakes, so, it might not look as good. 
  6. If you like your pancakes plain, you can eat it as is, with syrup if you want. Maple syrup is yummy, but you can also add dulce de leche, fruit syrup, or anything you want to eat with the pancakes. 
  7. If you want choco chip pancakes, here's 3 ways you can make it: 
    1. Poke in the chocolate chips RIGHT when you take them off the skillet. They have to be really hot in order to put in the chocolate chips
    2. You can also add in the chocolate chips after you pour in the batter, before you flip it. However, this may cause other pancakes to stick.
    3. You can add the chocolate chips into the batter, and then cook them, but then again, it may cause other pancakes to stick. 
  8. Enjoy your pancakes!
