Happy Halloween and Cheese Soufflé Recipe

Happy Halloween everyone!

I hope you guys enjoy your Halloween. If you're going trick-or-treating, be sure to stay safe! And remember, don't overindulge on candy (oh, and chocolate too!).

Anyway, on the topic of food, we made Cheese Soufflé in class the other day. I admit, I personally don't like soufflé but it looked delicious. There were people in my class that like this soufflé.

So, here's the recipe!

Ingredients:

  • 1/4 tsp dry mustard
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Swiss cheese
  • 5 egg yolks, slightly beaten
  • 5 egg whites
  • 2 Tbsp butter or margarine
  • 1/4 tsp cream of tartar
  • 3 Tbsp flour
  • 1/8 tsp salt
  • 1 1/4 cup milk
  • Pinch of red cayenne pepper
Directions:
  1. Preheat oven to 375°F.
  2. Prepare soufflé dish. Butter bottom and sides of a soufflé dish. Coat with a thorough dusting of flour or dry grated cheese (for example, parmesan cheese).
  3. In a medium saucepan over medium heat, melt butter. Blend in flour and salt; cook 1 minute to make a blonde roux. Add milk slowly whisking constantly to prevent lumps.
  4. Increase heat to medium high and whisk constantly until white sauce is thickened.  Add cheeses, cayenne pepper and dry mustard. Remove sauce from heat.
  5.  Gradually add a small amount (3 tbsp) of hot cheese mixture to egg yolks (this is called “tempering”); stir well; add egg yolk mixture back to cheese sauce in pan. Cover and set aside.
  6. Beat egg whites with cream of tartar to stiff peak stage. Gently fold 1/4 into cheese mixture. Add the cheese mixture gently into the bowl with the egg whites and gently fold to combine.
  7. Pour into the prepared dish. Bake for 40 to 45 minutes or until skewer inserted comes out clean.
I hope you guys enjoy this soufflé.

Have a safe and happy Halloween!

How do you celebrate Halloween (if you celebrate it)?

Happy Halloween!!!

Happy Halloween Everyone! It's  Candy chocolate time. I love chocolate.

Anyway, I hope you guys are having a great Halloween.I know I have been having a good one except for my math exam (well, it was actually easy). I am too old to go Trick-or-Treating but I like chocolate candy! I hope we have leftover chocolate candy. That's more that I can eat. =)

Well, the first thing I should do is tell about the foods I've eaten today. For breakfast, here's what I ate:

I ate Kashi Cinnamon Harvest Cereal with Unsweetend Vanilla Almond Milk. It was delicious!

Then, I ate a turkey sandwich with multigrain rounds from Costco and Laughing Cow Light Swiss after my workout.

After that, I ate Clif Coconut Chocolate Chip Bar. It was delicious.

Then I ate half of a Chipotle Burrito for an early dinner. I got the burrito with brown rice, guacamole, black beans and salsa. It's healthier than the other things and it was pretty good. After all, it was only 2 bucks since I was wearing a costume. It was so funny because there was a guy that dressed as Elmo, full costume. People wanted to take pictures with him. The line was also really long.

Then, I ate Sweet Tarts because I wanted something sweet.

After that, I got hungry since I ate dinner early and I ate Rice Chex with some Peanut M&M's and drank a Diet Pepsi. The Chex was tasty. Cripsy and crunchy, just the way I like it. The M&M's, were good too. The salty crunchy peanuts with the contrasting sweet chocolate is so good.

I also ate a Twix. I love twix.

I guess that's all I'll post for now. I know I ate a lot. It's only so far 1400 calories, which I am kind of surprised about. I'm suppose to be eating 2000 calories. Well, everyone should be. I have 600 more calories I can consume.

So, how many calories do you consume?
Do you even count calories?
What's your favorite Halloween Candy?
