Brown Rice Broccoli Tofu Mesh

Hey hey everyone. I hope your weekend is going good. It's Labor Day weekend!
So, here's the recipe I promised from earlier this week. I know, I'm sorry for making you guys wait 6 days for this.
Anyway, it's simple to make. The only thing is that I never really measure anything when I cook. I know what ingredients I use and the approximate amounts. Usually in Asian cooking, we just use our eyes and see if we have enough of one ingredient or another.
Here's a loose recipe you can follow. Enjoy.



Ingredients:

  • brown rice 
  • tofu (I used one container of tofu)
  • broccoli
  • carrots and peas (I used the frozen ones)
  • Annie's Lite Honey Mustard Vinaigrette
Directions:
  1. Cook the brown rice. I usually cook 1-2 cups dry brown rice. 
  2. Cut the tofu into cubes. Pour the dressing over the tofu and let it sit and marinate. 
  3. Boil the broccoli in water. You can also roast the broccoli instead of you like roasted vegetables.
  4. Spray a non-stick pan with cooking spray. I use the olive oil kind. 
  5. Add in the tofu (and all of the sauce). 
  6. Cook and brown the tofu. Then, add the carrots and peas. 
  7. Mix in the broccoli. And then add the rice. Stir and make sure all of the fillings are evenly distributed. 
  8. Serve and enjoy! 
I hope you guys enjoy this meal. If you want a more asianified meal, use tamari or soy sauce instead of the vinaigrette.

Brown Rice Fried Rice

I've been craving fried rice for such a long time. I mean, my parents do make fried rice, but they always put spam in it and use jasmine white rice. I don't eat pork and I don't usually eat white rice.

Finally, I made myself some fried rice last night. I cooked a batch of brown rice, so I decided to make some fried rice with it. I'm so glad I did because it was delicious. Yea, it's not the same as the ones my parents make, but it's still really good. It's also a lot healthier too. The recipe is only around 330 calories, and it's a lot of rice too. I was going to save half for another meal but I ended eating eating all 330 calories worth of it because it was just too good.
Before I give you the recipe, I have some things to say. I still have to write up posts about fats as well as proteins. My nutrition class went over proteins this week. They will be up eventually. So, be sure to keep an eye out for them. There'll also be product reviews coming up too.  Also, I finally ran my best mile time ever in my life. 7:50 for one mile. I ran 5 miles in 37:20 today.


Here's the recipe. You can use just egg whites instead of the whole egg if you want, but the egg yolk has a lot of nutrients to it.

Ingredients: 

  • 1 cup cooked brown rice
  • 1 egg
  • 1 stick imitation crab meat
  • 1 mini turkey sausage link
  • 2 tablespoons frozen peas (optional)
  • 2 tablespoons dark soy sauce
  • olive oil cooking spray (to coat the pan)
You can put anything you want in your fried rice.

Directions:

  1. Heat up a non-stick pan or wok to medium heat. Spray with olive oil cooking spray. 
  2. Cut up the turkey sausage and the crab eat. 
  3. Crack the egg into the pan and scramble the eggs. Add in the meats and the vegetables that you wish to put in and cook the.
  4. Then, add in the rice. Mix well and stir in the pan. 
  5. Mix in the soy sauce and any other seasonings you wish to add. Garlic salt, salt, pepper, sugar, anything you like. I didn't add any to keep things simple and still tasty. 
  6. The fried rice is now done. Enjoy with some steamed vegetables if desired.

Brown Rice Sushi Salad

大家好!How are you guys today? I'm doing pretty fine on this hot summer day. Well, not that fine, actually. I feel like I've been eating a lot lately. I haven't gained any weight, but I just had to say that. Anyway...

Today, I made brown rice sushi salad. I was actually planning on making regular brown rice sushi, but I realized that I didn't have any seaweed. I was still craving the sushi rice though. So, I decided to through the filling in together with the sushi rice, and there you go! Brown rice sushi salad. Sounds pretty easy to make. And, it was easy to make! The only problem is that it's sort of time consuming, the way I made it. So, here's the recipe.

Ingredients:
  • 2 cups uncooked brown rice
  • 3 sticks imitation crab meat (add another stick if you like more)2
  • 1/2 package of firm tofu
  • garlic salt
  • 1/3 cup rice vinegar
  • 2 tablespoons mirin
  • 3 tablespoons sugar
  • 1  1/2 tsp salt
Directions:
  1. Cook the brown rice how you would normally cook it. I soaked the rice in water for 1 hr, then drained the water. Then, I added 3 and half cups of water and cooked it in the rice cooker. 
  2. In the meantime, cut the tofu into small cubes and then season the tofu with garlic salt. Preheat the oven to 400 F.  Bake it for 20-30 minutes.
  3. Once the rice is done cooking, mix together the vinegar, mirin, sugar and salt in a small bowl. Then, pour it into the rice and mix. 
  4. Cut up the imitation crab meat and mix it in with the rice. 
  5. Then, mix in the tofu. 
  6. You can add avocado, if you want, but I didn't have any on hand. 
  7. Enjoy. :)

How to cook brown rice: Stovetop Method

As you know, I'm a health freak. You can tell, since I cooked some brown rice. Brown rice is really good for you. It's a lot different from what Asians usually eat. My family still eats their Jasmine Rice, but I eat brown rice whenever I can.
Brown rice is actually tasty, if you like the nutty kind of flavor. I guess some people don't like it because it's not as soft as white rice. Also, it takes a longer time to cook. But, if you cook it correctly, the rice can be soft enough. I'm so happy because I've achieved that today.
It's best to switch from white rice to brown rice. You can use it to make fried rice too. You can eat it with chicken, fish, veggies and with whatever you please. I like it with tofu (steamed), broccoli, (with oyster sauce), salmon and soy sauce on the rice. It's just a suggestion. I really want to try it with red beans and coconut milk. I will when I can.  But, anyways, here's how to cook the perfect brown rice, the stove top method.

Ingredients
  • 1 cup brown rice
  • 3 1/2 cups water
Directions: 
  1. In a bowl, soak the brown rice for at least 1 hr. 
  2. Drain the water, put the rice in a pot for the stove and mix in the 3 1/2 cup water. 
  3. Put it over high heat until it boils. 
  4. Cover the lid and turn it to low heat. Let it simmer and cook for 45 minutes. DO NOT UNCOVER THE LID. 
  5. Once 45 minutes have passed, you may remove the lid to see if the rice is cooked. If not, cook it for an additional 10 min. If it is, then, the rice is done. Enjoy.
